iAno - A Piano For Your iPhone/iPod Touch
I’m gonna be perfectly honest and say I know next to nothing about playing the piano but for any budding pianists out there that do, Mark Terry has released iAno, a native application for your iphone/iPod touch that emulates one. It’s available on the modmyifone source thru Installer. http://modmyifone.com/installer.xml

Tapstereo
While looking at some of my track-backs, I noticed quite a few Japanese sites linking to this site and noticed someone had a link to this application that i’d never seen for the iPod Touch / iPhone. It’s some sort of noise oscillator but reading the english translated version still doesn’t quite explain what this application is used for. Anyone that knows Nihongo better than I, that’s reading this care to explain what this application does? Download from here.

PocketGuitar - A Virtual iPhone Guitar
Shinya Kasatani has developed PocketGuitar, a native iPhone virtual guitar. Available on Installer by adding http://podmap.net/apps as a source under toys. Having failed at using a recorder in elementary school, I can’t quite comment on the application itself but do check out the screenshots below.
